Sicilian Orange Salad

How is this recipe good for supporting skin & collagen health?
Oranges
Oranges are naturally rich in vitamin C, which is essential for collagen synthesis. While protein-rich foods provide collagen building blocks, vitamin C helps your body actually form and stabilise collagen properly. Oranges also provide antioxidants like flavonoids that help protect skin cells from oxidative stress and environmental damage linked to premature ageing.
Extra Virgin Olive Oil
Rich in monounsaturated fats, vitamin E and polyphenols which help support skin hydration, protect collagen from oxidative stress and strengthen the skin barrier. A healthy skin barrier is essential for maintaining soft, resilient and hydrated skin.
Olives
Olives provide healthy fats and antioxidant-rich polyphenols that help reduce oxidative stress and support overall skin hydration and barrier function. Their anti-inflammatory compounds may also help support skin resilience and healthy ageing.
Fennel
Fennel provides vitamin C, fibre and plant antioxidants that help support collagen synthesis and protect skin cells from oxidative stress. It also contains compounds that may help support digestion and the gut microbiome, which is closely linked to skin health through the gut–skin connection.
Ingredients
3 oranges, peeled and sliced
1/2 fennel bulb, finely sliced
1/2 cup mixed pitted olives
1/2 shallot, finely sliced
1/4 cup flat parsley leaves, chopped
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1/2 teaspoon chilli flakes
Instructions
Arrange the sliced oranges onto a large serving platter or bowl. Scatter over the fennel, olives and finely sliced shallot.
In a small bowl, whisk together the extra virgin olive oil, red wine vinegar and balsamic vinegar. Stir through the chopped parsley and chilli flakes.
Drizzle the dressing over the salad just before serving and gently toss to coat. Serve immediately.
